Hey BBQ Family! 

Greetings from the Lone Star State where natives claim that Texas style barbeque is better than the que cooked in other states. I'm here visitng my brother and sister in law who live halfway between San Antonio and Austin in Central Texas. 

According to Aaron Franklin, whose restaurant I hope to experience while I'm here, there are 4 style of barbeque in Texas. 

  • Central Texas - Most known for having rubs consisting only of salt and pepper. Meat is slow cooked over mesquite, pecan or oak wood. 

  • East Texas - Also known for slow smoked meat, usually until it "falls off the bone". Meat is also marinated in a sweet tomato- based sauce and smoked mostly with hickory wood. 

  • South Texas - Features a sweet sauce based on molasses. South TX barbeque is heavily influenced by Mexican cuisine and is also known as barbecoa. Tounge and cow's head can frequently be found on the menu.

  • West Texas - Unlike the slow smoked meat methods in other regions, West Texas barbecue is known for being cooked over direct heat on an open flame at high temperatures similar to traditional grilling. Mequite is plentiful and is the wood of choice. 

I'm excited to try some authentic Central Texas barbeque this week and I'll let you know my thoughts about it!
